Brilliant ruby red with a good intensity. Bright fruity with flavour of black fruit. Young, fresh and persistent.
It pairs well with thin soups, red meats, roast meats and cheeses. Excellent with the typical courses of Piacenza tradition, such as the “pisarei and fasò” (pasta and beans) and “piccola di cavallo” (minced horse meat).
Why we like it
After a light pressing and maceration at a temperature of 23°C, wine ends slowly its fermentation at a temperature of 18°C keeping its fruity aromas inalterated. After this process the refermentation in a pressure tank gives to the wine a delicate and typical petillant.
