Tasting notes
Straw-yellow colour tending to greenish. Dry, fresh, delicate and with a good
tanginess and slightly bitter aftertaste. Delicate and fragrant with hints of mint and
fresh-cut fl owers.
Pairings
Perfect as an aperitif, it matches “coppa” and the other cold-cuts of the Piacenza cuisine.
Why we like it
After cold skin maceration for 24 hours and fermentation with cultured yeasts at a temperature of 16°C, the wine is put in pressure tank where a slow second fermentation completes its fragrance giving it a delicate petillant
